Peanut Butter Cookie Dough Yogurt
After posting about Peanut Butter Cookie Dough Bites yesterday, I intended to quickly follow up with what I did with them. Unfortunately, life got in the way.
Kai and I had big plans yesterday. We saw the dentist, the pediatrician, and made a special trip to the pediatrics ward of our local hospital for a car seat study.
Since Kai was born four weeks early, she was considered a preemie and was required to complete a car seat study before she could be discharged from the hospital to ensure that she was big enough for her seat to be safe. Unfortunately, she failed it, twice, and was sent home with a loaner car bed, which essentially looks like a box that she lays in and gets strapped to. Yesterday, after passing the test, she finally graduated to a ‘normal’ car seat! (And got the ok to ride in the car seat on the jogging stroller!)
Ok, so more about yogurt. Last week Maria from A Life to Bragg About blogged about some interesting flavors of yogurt that she made at home. Her post, coupled with Branny’s Cookie Dough Hummus recipe totally inspired me to try out a special yogurt flavor of my own. It tastes pretty indulgent, but isn’t at all; just what I was going for.
Ingredients:
- 6 oz plain Greek yogurt (I used non-fat)
- 2 tbsp Splenda or other sweetener to taste
- 2 tbsp PB2 or peanut flour
- 1 serving peanut butter cookie dough hummus bites
Directions:
- Stir sweetener and PB2 into yogurt until thoroughly combined.
- Crumble cookie dough bites, then fold them into the yogurt mixture.
Servings ~ 1
Calories ~ 258, Fat ~ 6 g, Carbohydrates ~ 24.2 g, Protein ~ 24.9 g
Looks intriguing, and it definitely packs lots of great protein!
Glad Kai can be in a normal car seat and got an okay for the jogging stroller! Now I suppose you just have to wait for the weather to be okay for the stroller. 🙂
Yeah, the weather has been crazy this winter. We have had a lot of warm enough days, but they have all been rainy.
