Peanut Butter Cheesecake Mousse
I was a bit skeptical about this recipe. Not because I didn’t think it could approximate cheesecake, but because I am quite possibly the only person in the world with a fierce dislike for cheesecake.
I can’t put my finger on exactly why I dislike cheesecake, but I have never taken more than one bite without turning my nose up at it. Just not my thing.
This mouse though, is totally my thing. In a word, awesome.
I garnished mine with Craisins, but in retrospect raisins would have made a lot more sense because of the peanut butter flavor. Next time I will try raisins.
Adapted from Cara’s Cravings.
Ingredients:
- 10 oz cottage cheese
- 2 tbsp peanut butter
- 1/4 cup Splenda
- 1 tbsp vanilla extract
Directions:
- Combine ingredients in a food processor.
- Blend until smooth.
- Add additional peanut butter, Splenda, or vanilla to taste.
- Chill in freezer for 10 minutes.
- Enjoy.
Servings ~ 2
Calories ~ 200, Fat ~ 10 g, Carbohydrates ~ 11 g, Protein ~ 22 g
I think I will give this a try tonight. I have some calories left for the day and I love peanut butter!
I think I am going to test out a strawberry one with strawberry preserves tonight! I have been thinking about it all day! The peanut butter one totally hit the spot last night!
